Orange Cranberry Bread

  1. Heat oven to 350 degrees.
  2. In a large mixing bowl, combine butter, sugar, egg and orange peel. Beat at medium speed, scraping bowl often, until well mixed (1-2 minutes).
  3. Reduce speed to low and add all other remaining ingredients except cranberries and pecans. Continue beating and scraping the bowl until well mixed (1-2 minutes).
  4. Stir in cranberries and pecans; spoon into greased 9X5 inch loaf pan (or 3 greased 5 1/2X3 inch loaf pans).
  5. Bake 50 to 60 minutes or 30 to 40 minutes for smaller loaves (toothpick inserted in the center should come out clean). Cool 10 minutes; remove from pan and cool completely.
  6. In small bowl, stir together glaze ingredients. Spread over bread.

This is a very moist bread that is pretty easy to make but requires quite a few ingredients. It is definately a holiday favorite for us.
