Original recipe yields 4 servings

  1. Bring water to a boil and salt with a small handful of kosher salt. Add pasta and cook until one minute before al dente. Scoop out some pasta water with a mug or measuring cup.
  2. In a large skillet, saute garlic and vegetables in olive oil until vegetables are tender.
  3. Pour some pasta water on the sauteed vegetables and simmer to create a pan sauce.
  4. Transfer pasta to the skillet and toss until thorougly coated in sauce. Cook for about two minutes over medium-high heat, until pasta is al dente.
  5. Add more pasta water if needed to loosen up the sauce. Remove from heat.
  6. Stir in butter and/or olive oil and freshly grated cheese.
  7. Sprinkle fresh herbs.
  8. Toss and serve.
