"This recipe was inspired by a potato soup that my son makes. I was looking for something thick and hearty that would comfort me on a cold night. I served it with cornbread and it ended up being so good that there was not a drop left!"

  1. 1. In a large sauce pan, add potatoes, celery, onions, beef bouillon, water, garlic and parsley. Season with salt and pepper and simmer until vegetables are tender.
  2. 2. In a separate bowl, mix flour and half-and-half. Once it is well blended, slowly add to soup and cook until soup thickens.
  3. 3. Stir in cheese and bacon and simmer until cheese is melted.
