Easy Black Beans and Rice

"This is my favorite thing to do with leftover rice. I usually have it for lunch as it is very fast but I have also made it for burrito filling and added sour cream and cheese or put it in bell peppers. I love cumin and salsa but you can adjust this recipe easilly to your tastes. It is yummy!!"

  1. Re-heat rice in a microwave safe bowl by sprinkling with about 1-2 tablespoon water. Cover and vent lid. Use tightly sealed seran wrap and place a small hole if you do not have a ventable lid.
  2. In a small sauce pan place black beans, salsa, cumin and rice. Stir until combine. Add more salsa if to dry. Heat through and serve.
