Light Creamed Spinach


"Got this idea from another site, but then adopted it to my family's liking. We love creamed spinach, but the calories and fat content are extremely high for someone who's looking to cut those things out of their diet. I lightened this recipe and got rave reviews from the entire family. They asked for this to be a weekly staple on the kitchen table. Fresh spinach mixed with Laughing Cow cheese makes this dish so creamy."

  1. Turn stove to medium/low. Melt butter and add onions. Cook until translucent. Add squeeze garlic when onions are about one minute from being done.
  2. While onions are cooking, pour milk into a glass container. Add the light Laughing Cow Cheese and pour into milk. Also add the parmesan cheese and light cream cheese to the milk mixture. Heat in microwave for about 3-4 minutes, or until cheese is melted (best to use a whisk to stir).
  3. Stir milk mixture every once in a while while cooking.
  4. Onions should be ready at this point. Drop the spinach into sauteed onions and pour warmed milk and cheese mixture over the spinach. Sprinkle hot sauce into mixture. Toss with tongs to coat completely.
