"The basil in this meal comes through in such a bold way. It has authentic Italian flavour while still being very simple to create. I made this meal for the first time this weekend and I will definitely be making it again soon. Give it a try. You will not be disappointed."

  1. Prepare pasta sauce if making from scratch
  2. Lay all 4 chicken cutlets on flat work surface
  3. Season each piece of chicken on both sides with salt, pepper and garlic mixture
  4. Lay a slice of prosciutto on each piece of chicken
  5. Next lay provolone cheese and then large basil leaf
  6. Carefully roll up each chicken cutlet, keeping them snug as you roll
  7. Tie 2 pieces of twine around each piece to keep them together
  8. Trim the loose ends of twine
  9. Lightly brush each rolled piece of chicken with EVOO
  10. Preheat oven to 350 degrees
  11. Place chicken on tin foil covered baking sheet
  12. Bake until cooked (approx. 15 minutes)
  13. Remove from oven and let rest 3 minutes
  14. Remove twine from chicken pieces, cut into slices, and serve on a warm pool of sauce
  15. Garnish with torn pieces of basil
