Curry Chicken w/Cashews

"This curry chicken is simple to make but tastes like it came from an Indian restaurant. The cashews add a little texture to the meal and the heat is just right...not over powering but tasty. WARNING: Your house will smell like curry after you make this meal."

Original recipe yields 4 servings

  1. In a large saucepan heat butter over medium-low heat.
  2. Add onion, garlic and ginger, stirring until soften (approx. 5 minutes).
  3. Add curry powder, salt, ground cumin, cayenne pepper and cook (approx. 2 minutes).
  4. Add chicken stirring to coat (approx. 5 minutes).
  5. Add tomatoes (including juice) and cilantro, bring to simmer then cover and simmer gently, stirring occasionally until chicken is cooked through (approx. 45 minutes).
  6. Just before serving chop cashews in blender/food processor then add to curry along with yogurt and simmer gently uncovered, stirring until sauce thickens (approx. 5 minutes).
  7. Serve over rice.
