  1. Cream butter and sugar together, add egg yolks and cream well. Add mashed bananas.
  2. Beat egg whites until fluffy and stiff in a small separate bowl, set aside.
  3. In a separate bowl sift flour, baking soda, baking powder, cinnamon and nutmeg.
  4. Add buttermilk and flour mixture alternately to banana mixture. Then stir in pecans.
  5. Fold in egg whites and pour into oiled and floured pan(s). Top with roasted pecan pieces.
  6. Bake in a preheated oven for 25 - 30 mins.
