  1. Prepare couscous with 1 cup of chicken stock, according to package directions.
  2. Mix peaches, onion and cilantro and set aside. Toss tomatoes in small skillet over medium heat until starting to brown; remove and add to peach mixture.
  3. Make dressing by combining, juice, oil, honey, chipotle (start at 1 tsp), garlic, ginger, mustard and salt. Taste and season as needed.
  4. Coat chicken with chipotle rub and bake until done.
  5. Mix couscous, peach mixture, diced chicken and dressing.
