Moroccan Carrot Salad

"This is a great cold salad. It is served quite frequently in southern Portugal as an appetizer accompanied with olives and Portuguese bread. I've also had it in Moroccan restaurants. You must love garlic to appreciate this."

  1. Cook the carrots in boiling salted water until they are just tender with a fork but not totally soft. Drain, and let dry and cool.
  2. In a bowl mix all the remaining ingredients together and toss with the carrots. Chill overnight.
