Pre-heat the oven at 400 degrees. In a big bowl coat the leg quarters with the lemon pepper, salt and parsley(If you have time let the coated chicken set in the fridge covered for two hours). Sear the chicken in 2tsp olive oil skin side down to help crisp the skin. Place the chicken quarters on a roasting pan and bake for 1 hour or until the juices run clear.
