  1. PREHEAT OVEN TO 425
  2. Trim loin of all fat.
  3. In a bowl, combine spices and sprinkle over loin on both sides.
  4. Heat olive oil over medium heat.
  5. Brown loin on all sides, a few minutes.
  6. Transfer loin to pyrex dish and add juices from cooked loin.
  7. Cook in the oven 10 minutes.
  8. While the loin is in the oven, mix the shallots, mango and lemon juice in a small bowl.
  9. After 10 minutes, cut into the middle of the loin and if it is still pink, cook a few more minutes.
  10. When done, slice into cutlets and place in a serving bowl. Add juices from dish and mix.
  11. Serve with mango/shallot/lemon juice mix on top.
