Kitty's Blue Ribbon Spinach Quiche

"For years I searched for a quiche recipe to replace one I had lost. Finally I ended up combining what I could remember with a recipe I found online to try to recreate the recipe I had lost. What I came up with was better than the original! This quiche is so good you can eat it hot or cold. It can easily be warmed in the microwave "if" you have any leftovers. It is very pretty and makes an elegant addition to any brunch."

  1. Cut shortening into flour using a pastry cutter until flour mixture is small pea sized beads
  2. Add water and blend by hand just enough to from dough, then roll out on floured cloth
  3. Git pie crust to pie pan, crimp edges, and prick bottom and sides with a fork. Line pastry with heavy duty aluminum foil
  4. Bake in 450 degree oven for 8 minutes, remove foil, bake 5 minutes more or till golden. Cool on wire rack
  5. While pastry is baking, cook bacon and onion together in a medium sized skillet till bacon is crisp. Drain on paper towels
  6. In medium sized bowl beat eggs then add the rest of the ingredients and blend together
  7. Pour egg mixture into warm pie shell and bake for 45 minutes at 325 degrees.
  8. Cool at least ten minutes before serving
