"My take on a traditional Swiss Macaroni & Cheese Recipe. A household favorite of ours. Alpine comfort food! Meatless for Lenten or vegetarian."

  1. Bring to boil a 2 qt. sauce pan of water
  2. Cook the diced potato until just tender, about 5 minutes, drain, cool & set aside.
  3. Bring the pot back to boil and cook the pasta per package instructions,drain, cool and set aside.

  5. In a saute pan, melt the butter with olive oil, and carmelize the onions until soft & brown
  6. +++
  7. In a large bowl combine the potato, pasta, cheeses, pepper, salt, dry mustard, and smoked paprika
  8. +++
  9. Preheat oven to 350 degrees. Spray or butter a 2.5 quart casserole
  10. Take the contents of the bowl and place in casserole, pour in the heavy cream, and spread the carmelized onions over the top
  11. +++
  12. Place the casserole into the overn and bake for 60-75 minutes, uncovered
  13. Remove from oven and set aside to set for 5-6 minutes.
