  1. Cut the scallions in half and lengthwise
  2. Place a bunch of scallions across the veal and roll tightly
  3. Heat butter in pan and add veal rolls, seam side down and leave for a minute, then gently roll each to brown all sides
  4. Add all the ingredients, except mirin, and cook for another 2 or 3 minutes, rolling veal to coat
  5. Remove veal and increase heat for a couple minutes, reducing the liquid, then add mirin and veal rolls. Rolling them until well coated
  6. Cut in half and serve
