Vietnamese Lemongrass Beef and Noodles

  1. Marinate sliced flank steak in lemongrass, soy sauce, garlic, sherry and brown sugar. Toss evenly and let sit for 30 min.
  2. On medium high heat, quickly saute beef until medium rare to well. Arrange vermicelli noodles in a medium bowl for one serving. Add hot beef on top with fresh sprigs of cilantro, bean sprouts and basil leaves. Add 1-2 tablespoons of sweetened fish sauce over the top and serve.
  3. To make fish sauce:
  4. Add sugar and lemon juice to the warm water and mix until sugar has dissolved. Add remaining ingredients and stir well until mixed. Add more fish sauce or sugar based on preference.
