"Poaching is a great way to bring out the delicate flavor of fish. A poacher will use less liquid than a pan, but either works. Fantastic hot or cold. Try salmon, snapper, striped bass, halibut, trout or any firm white fish."

  1. Combine all ingredients except for fish in poacher over two burners on stove
  2. Rinse fish under cold water, stuff cavity with some dill and lemon slices and place on rack in poacher
  3. Cover and slowly bring to strong simmer (don't boil at any point)
  4. Cook for 20 minutes or until fish is cooked (internal temperature of 140 degrees), don't overcook
  5. [If being served cold, remove poacher from heat a bit earlier and allow fish to cool in liquid to prevent skin from cracking]
  6. Drain and serve with a little lemon or your favorite sauce
