  1. In a large bowl combine chicken pieces, garlic, oregano, pepper and salt to taste, vinegar, olive oil, prunes, apricots, olives, capers and juice, and bay leaves. Cover and let marinate, refrigerated, overnight. (Or use ziploc bag instead of a covered bowl.)
  2. Preheat oven to 350 degrees F. Place chicken in a single layer in one or two large, shallow baking pans. Pour the marinade over the chicken, then sprinkle the brown sugar over the chicken evenly and finish by pouring the white wine around the chicken pieces.
  3. Bake for 50-60 minutes, basting often with pan juices.
  4. With a slotted spoon, transfer chicken, prunes, apricots, olives and capers to a serving platter. Pour some pan juices over top and then sprinkle generously with cilantro just before serving.
