Vegan "Sure to Fool 'Em" Stuffed Shells

  1. Stuffed Shell Directions:
  2. Get your shells ready (do not cook) in a lasagna pan. Don't forget to spray the pan with a non-stick cooking spray!
  3. Preheat oven to 400 degrees.
  4. Spread some of the sauce, covering the entire bottom of the pan.
  5. In a food processor/mixer, add the tofu, onion, spinach, pesto, and puree till smooth and place in a zip lock bag.
  6. Snip off bottom of bag and pipe into shells. Cover with remaining sauce.
  7. Cover with foil, cook for 20 min, remove foil, sprinkle with soy mozzarella and cook for an additional 10 min.
  8. Serve with salad and crusty bread! No one will know it's not ricotta!
  9. Get crazy and experiment with other veggies in the tofu mixture like mushrooms, zucchini, peppers, swiss chard, etc. for added flavor and vitamins.
