"Banana nut bread is close to food paradise, but most of the ones I've had simply don't deliver the banana flavor and/or are too dry. This one is an easy-to-make cake that not only combines the sweetness of the bananas with the perfect texture of walnuts, but is also rich and moist, with a pronounced banana flavor. Straight out of the oven, the cake will have a nicely textured crust."

  1. Preheat oven to 350 F.
  2. Cream the sugar, oil, and butter in a mixer, on medium-low speed.
  3. Add the vanilla extract.
  4. Whisk the flour, baking powder, baking soda, and salt in a bowl. On low speed, slowly add to egg and sugar mix.
  5. Add the milk and continue mixing until uniform.
  6. Add mashed bananas and mix a little bit, just until evenly spread.
  7. Add walnuts and mix by hand.
  8. Butter and flour a 9" loaf pan (or use a parchment paper sling).
  9. Bake for 1 hour or until a toothpick inserted into the middle comes out clean.
