"Use your favorite leftover chili to create this scrumptious Mexican-style lasagna."

  1. Spread 1/2 cup enchilada sauce to coat bottom of a 9x9 glass or silicone baking pan. Arrange 4 pcs of tortilla in pan, flat edges against sides of pan so bottom is covered.
  2. Add 1 cup of chili, using the back of a spoon to spread edge to edge. Do the same with 1/2 cup of salsa. Sprinkle 1/2 cup of cheeses on top. Repeat tortillas / chili / salsa / cheese for 2nd layer.
  3. Top with last 4 pcs of tortilla, remaining 1/2 cup of enchilada sauce and last 1/2 cup of cheeses. Bake for 30-40 mins at 350 degrees F, until hot and bubbly.
  4. Serve with sour cream and/or guacamole. I also serve with Sweet Corn Tomalito (from this site).
