  1. 1. In a medium saucepan over low heat, melt together the peanut butter, chocolate chips, and sugar, stirring constantly.
  2. 2. When the chocolate is melted, increase heat to medium and continue stirring until the first bubbles begin to escape from the bottom. Remove from heat.
  3. 3. Grease a 9 x 13 inch pan. Preheat the oven to 350 degrees.
  4. 3. In a blender of food processor, blend the avocado, soy milk and oil until smooth.
  5. 4. In a large bowl, combine the flour, baking powder and salt. Stir well. Do not skip this step.
  6. 5. Add the avocado mixture to the chocolate mixture and stir until thoroughly combined.
  7. 6. Add the liquid mixture to the dry mixture. Still just until combined. Over-stirring will cause the brownies to be tough.
  8. 7. Poor the batter into the pan and spread evenly. Batter will be thick. Bake at 350 degrees for 20 minutes. Allow to cool completely before cutting and serving.
