  1. Poach chicken in a large pot of simmering water.
  2. Add Thyme, basil and garlic powder to the water. Cook until no longer pink in center, about 12 minutes.
  3. Remove the chicken from the pot and set aside.
  4. Bring chicken cooking water to a boil and cook pasta, garlic, onion and broccoli in it.
  5. Drain the pasta.
  6. Cut chicken into small pieces, and mix with noodles.
  7. In a separate bowl, mix together mushroom soup, chicken soup, and sour cream.
  8. Season with salt and pepper.
  9. Gently stir together cream soup mixture with the chicken mixture.
  10. Place in a 2 quart baking dish.
  11. Melt butter and Garlic olive oil in a small saucepan, and remove from heat.
  12. Stir in crumbled Ritz crackers.
  13. Top casserole with the buttery crackers.
  14. Bake at 350 degrees F (175 degrees C) for about 40 minutes, until heated through and browned on top
