Vegetarian Chili


"Whenever I'm completely drained from a long day, this recipe never fails me. Delicious with rice or sweet cornbread on the side. If you want to reduce the sodium, try adding 1 tablespoon of chili powder in place of the salsa."

  1. In a fairly large pot, saute the chopped onion until clear. Then add the green pepper, stewed tomatoes, black beans, and garbanzo beans. Let simmer for 10 minutes, stirring occasionally.
  2. Add the corn, broccoli, salsa, garlic powder, cumin, and red pepper flakes. Let cook for an additional 20 minutes, stirring occasionally.
