  1. Preheat the oven to 375 degrees.
  2. Cook the sweet potatoes until soft. My preferred method is sticking them with a fork and them cooking them in the microwave. Once they are cooked, you should be able to peel the skin off easily.
  3. Drain the garbanzo beans and them mash them. Add the softened, peeled sweet potatoes and mix them well together until a smooth consistency.
  4. Add the flour until the dough reaches a cookie dough like consistency- add extra if necessary.
  5. Mix in the garlic powder, cumin, and coriander.
  6. Roll the dough into 1 inch balls and then set on a greased cookie sheet, flattening them a little. Bake in oven for 15 minutes, turn each over, then bake for 15 more minutes.
