  1. Preheat oven to 425 degrees. Coat a 9x13 inch baking dish with cooking spray.
  2. In a large mixing bowl, whisk together mustard, oil, paprika, salt, thyme, and pepper; add potatoes and stir to coat.
  3. Transfer potatoes to prepared baking dish and roast 20 minutes; stir and roast until tender on the inside, about 30 to 40 minutes.

These potatoes were great. I'm not a fan of dijon so I subbed with spicy brown mustard. Was a little nervous of how they would taste. Both the BF and I loved them. Will make again. Thanks!
