Parmesan Risotto


"This is a recipe that I tried for the first time and I wrote it down as I threw it together. Not sure how many servings it makes (probably 4-6), but my hubby ate 2/3 of the bowl. Enjoy!!"

  1. In one sauce pan - boil the chicken broth, then lower heat to simmer
  2. In the other sauce pan, saute the onion, garlic, and pepper in the olive oil until
  3. the onion is transluscent.
  4. Add 2 Tbsp of the butter.
  5. When that's melted, add the rice until it's covered and no butter remains in the pan.
  6. Ladle the broth into the rice and stir until absorbed.
  7. Repeat until there's about 1 ladle's worth of broth left.
  8. Add the rest of the butter.
  9. When it's melted, add the rest of the broth and the parmesan cheese.
  10. Finish absorbing and serve!!
