  1. 1. Peel and cube potatoes and boil until soft covered in salted water, about 30 min.
  2. 2. Cut tops off garlic heads and pour olive oil down over covering well. Wrap in wax paper and roast at 350 in oven about 45 min or until soft.
  3. 3. Drain potatoes and add sour cream, cream cheese, butter, salt, and pepper. Cover and let sit to soften cheese and butter before mashing, about 5 min.
  4. 4. Add garlic by squeezing soft garlic out of cut openings on top into the potatoes.
  5. 5. Mash thoroughly with potato masher.
