  1. Preheat oven to 350 degrees F
  2. Grease and flour a 9in baking pan
  3. In one bowl combine dry ingredients, flour salt and baking power.
  4. In a larger bowl mash bananas with sugar. Add oil, water and vanilla. Mix well, add the dry ingredients to wet and mix until just combined. Stir in nuts if using.
  5. Pour into prepared pan and bake 30-35 minutes, or until a knife is poked in the center and comes out clean.
