  1. In a small bowl, whisk the shallots with the red wine vinegar, canola oil, olive oil, a pinch of salt and a grind of pepper.
  2. Place the mixed baby greens in a large bowl and drizzles the red wine mixture until the greens are lightly coated, but not weighed down.
  3. Place on salad plates.
  4. Top each plate with half of the dried cherries and the nibs.
