"I came up with this quick dish in an attempt to satisfy a meat-eater (my boyfriend) and a vegetarian (myself). None of the measurements are exact (except for the couscous and water!) so I like to have fun with this recipe. Sometimes I use kale instead of spinach, saute onions and fresh garlic in the olive oil, add chickpeas, or toss in diced tomatoes & olives before serving. My boyfriend loves to put soy sauce on it. I don't ask questions!"
Pan fry tofu in olive oil over medium-high heat until tofu is golden brown (this is a lot faster if you dry your tofu well).
Add spinach (whole or chopped to your preference)and cook until spinach is soft and wilted (usually only take a couple of minutes but you can speed this up by adding a tablespoon or two of water and covering). Season mixture with salt, pepper, red pepper flakes, onion powder, and garlic powder to taste.
In the same pot, add water over the tofu and spinach.
Once water comes to a boil, remove from heat.
Stir in couscous and cover for 5 minutes.
Fluff the couscous with a fork. Fold in feta cheese and enjoy!
