No Bake Brown Rice Energy Bars

"Brown rice syrup is a wheat-free and gluten free sweetener that is made by cooking brown rice in water until most of the water evaporates. The result is a sweet golden syrup that is about 20% less sweet than sugar. It has a light caramel flavor that works well in energy bars. These bars turn out different every time I make them. I usually make the granola myself, add different nuts and dried fruits as my mood strikes me. Great for on the go."

Original recipe yields 12 servings

  1. Spray a 13x9 inch pan with non-stick cooking spray.
  2. Heat brown rice syrup in a sauce pan with peanut butter over medium heat.
  3. Stir until mixed well.
  4. Stir in vanilla and cinnamon.
  5. Mix granola with sunflower seeds and almonds (or nuts and dried fruits of your choice).
  6. Pour peanut butter mixture over the granola.
  7. Stir until combined.
  8. Press into baking dish and chill until firm.
  9. Cut into bars and enjoy! Put in baggies for on the go individual packages.
