"My mom tried something similar to this in a restaurant and thoroughly raved about it, so I tried to re-create it for mother's day. She loved this version so much that she won't order Maple Curry Chicken in restaurants anymore!"
Saute onion, garlic, yellow pepper, butter, and oil in a large pan until onion and peppers are soft. Add sugar to caramelize, cook one minute. Add maple syrup and cook another minute. Add curry paste and cook another minute. Add chicken stock and cream, bring to a slow boil, then simmer on medium-low heat for fifteen minutes. While the sauce is simmering, cook chicken in a separate pan. Once cooked, add the chicken to the sauce. Simmer five minutes, then add the cream cheese. Simmer another five minutes. Serve over a bed of your favourite cooked pasta.
