Place the chicken pieces in a large bowl or plastic container, along with the buttermilk, hot sauce, and garlic cloves that have been peeled and lightly crushed open; stir and coat the chicken, cover and soak over night in the refrigerator.
To cook, dredge the chicken in the flour mixed with spices on a dinner plate. Place 4 or 5 pieces at a time into a large frying pan filled about 2 inches deep with canola oil that has been heated to about 370 degrees. About half of the chicken piece should be submerged in oil. Cook on each side about 8 minutes, being careful not to poke or touch the pieces more than is necessary, as this cracks the coating and leads to greasy chicken. After frying, place on paper towels to drain, then transfer to a large roasting pan and roast in oven at 400 degrees for 15 minutes. Serve hot or cold!
