Turkey and Courgette Loaf

  1. Preheat the oven to 180 degrees celcius.
  2. Using a low calorie oil spray, grease a loaf pan.
  3. Place the grated courgettes and 1/2 tsp of salt in a colander, mix well and allow to stand for 10 minutes. Squeeze well to remove as much liquid as possible.
  4. Combine all ingredients and mix well, with a wooden spoon or your hands.
  5. Pack into the loaf tin and bake for 60 minutes.
  6. Stand for 10 minutes, loosen the edges with a knife and turn out. Serve hot or cold.
