  1. In a medium sized bowl, beat the eggs, milk, cumin, coriander, red pepper, and salt together lightly, so that the spices are well mixed but the mixture is not frothy.
  2. Coat a skillet with cooking spray and bring to medium heat.
  3. Dip one slice of bread into the mixture so that both sides are covered. Do not soak the bread in the mixture, as the French toast will come out soggy.
  4. Place the slice of bread in the skillet and cook each side until golden brown.
  5. Repeat for each slice. You may need to re-coat the skillet with cooking oil between slices.
