Rinse and pat dry the chicken and place in roasting pan.
In a small bowl, mix together the honey and spices; rub this mixture onto the chicken using your hands. Place the chicken in a roasting pan with 1/2 cup of water in the bottom, baste with melted butter, then put into a hot oven, uncovered, at 400 degrees for 30 minutes; baste again with butter
Lower oven temp to 350 degrees and continue roasting and occasionally basting for an additional 1.5 - 2.0 hours or until instant read thermometer indicates an internal temp of 165 degrees. To prevent the skin from burning, cover loosely with foil during roasting when skin is browned and crispy.
