Low Carb Blue Cheese Cauliflower Salad

  1. Pull off the leaves and remove the hard inner core of the cauliflower and discard. Chop the remaining cauliflower into bite-sized pieces and cook in small batches in the microwave. Four minutes with a small amount of water rendered a tender, cooked vegetable in my 900watt oven. Cool.
  2. Crumble the bacon and set aside.
  3. Mix the onions, celery and walnuts together; set aside.
  4. Mix equal parts of the mayonnaise, sour cream and blue cheese together. Season with salt & pepper if desired, although the bacon and blue cheese were salty enough for me. Add the crumbled bacon, onion, celery, walnuts, and cooled cauliflower. Fold all together gently till well combined. Chill until ready to eat.
