  1. Preheat oven to 450. Cook the bacon on stovetop in a saucepan until crispy and set aside to drain and crumble. In same saucepan, sautee onion, spinach and mushrooms in bacon fat until soft. Remove and allow to cool. Food processor the spinach, mushroom and onion until smooth. Whisk eggs, then add vegetable mix and crumbled bacon to eggs and whisk everything until smooth. Pour mixture into 12-cupcake/muffin tin. Bake until toothpick inserted into the center comes out clean, approximately 35 minutes.
