In medium glass bowl, mix turkey, egg whites, breadcrumbs, blue cheese, salt and pepper. Set aside.
Over medium heat, add olive oil to 10 in. sauté pan. Sauté garlic until lightly brown. Add onion, jalapeno, serrano and green pepper. Stir constantly until vegetables are completely soft, around 10 minutes. Combine vegetable sauté to turkey mixture, blending ingredients thoroughly. Add parsley, salt, and pepper to taste.
Form 4 large patties, roughly 4 in” diameter, 1 ½” thick.
Spray grill pan generously and heat to medium-high heat.
Sear patties for 5 minutes on each side.
Place grill pan with patties into oven at 350° until patties reach desired internal doneness of 180°
