  1. Pierce potatoes with a fork, wrap in foil & bake at 400 degrees for 1 hour until soft.
  2. Allow potatoes to cool for 10 minutes.
  3. Slice off the top third of each potato lengthwise.
  4. Hollow skins with a spoon, leaving about 1/4" of the potato inside.
  5. In a bowl, combine potato interior, butter, sour cream, 1/2 of the cheddar cheese, heavy cream, milk, salt & pepper. Mash until smooth.
  6. Stir in bacon & onions.
  7. Fill each potato skin with the mixture & top with remaining cheese.
  8. Bake at 350 degrees for 15 minutes or until cheese has melted.
  9. Serve immediately.
