  1. Heat the oven to 325 degrees.
  2. Butter a 1 1/2 quart casserole dish.
  3. Place potatoes in 3-quart saucepan; cover with cold water.
  4. Add 1 tablespoon salt & bring to a boil. Cover; reduce heat.
  5. Cook for 20 minutes or until fork-tender. Drain.
  6. Put pan back on burner for 1 minute, shaking the pan until potatoes are dry.
  7. Mash potatoes with potato masher or mixer.
  8. Add butter, sour cream, cheese, chives & 1/2 teaspoon salt.
  9. Mash or stir until mixed.
  10. Spoon the mixture in casserole dish.
  11. Bake 20-25 minutes or until hot.
  12. Sprinkle with onions & bacon.
  13. Bake additional 5 minutes.
