"Based on my mum's old recipe but with Parmesan added instead of all cheddar. A comforting joy all year round as a snack, light main or side dish."

  1. Remove the leaves, divide the cauliflower into sprigs;
  2. Rinse, place in large pot and boil in salted water for some 5 minutes until tenderish but still has a bite in the stalk;
  3. Drain, BUT reserving 150/200ml of the cooking water;
  4. Heat Grill to max;
  5. Melt 40g of the butter in a small pan, stir in the flour and cook for a minute or so;
  6. Blend in the milk and bring to the boil, stirring until thickened, no lumps;
  7. Add the reserved cooking liquor, 100g cheese, pepper and mustard;
  8. Stir well until cheese melted;
  9. Place cauliflower in a baking dish, pour the sauce over and scatter the remaining cheese over the top;
  10. Sprinkle over the breadcrumbs and put cauliflower mixture under the hot grill until cheese on top is golden and bubbling;
  11. Meantime, fry bacon rashers until crispy;
  12. When cheese dish ready, sprinkle crispy bacon over the top and serve with crusty bread.

Had to use Dijon mustard but it was accepted wonderfully by family recently. Sorry, I don't always review as soon as I should. TY, now they want Cauliflower more!
