My Guy's No Sissy Ham & Cheese Quiche

"You can start this the night before for an easy to finish brunch or put it with a salad for dinner! When I started from this recipe making my first quiche some 20+ years ago, it was from my old Fanny Farmer Cookbook, I have changed it up a bit over the years, but the orginal concept is still there!"

  1. Preheat oven to 425*
  2. toss cheeses in a bowl with flour to coat
  3. Using an immersion blender or hand mixer:
  4. Mix eggs, nutmeg, cayenne, parlsey and salt together
  5. add light cream and mix again for 1 minute
  6. spread ham/bacon over the bottom of the pie crust
  7. spread cheese and onion on top of meat
  8. pour the egg mixture over all the fillings
  9. Bake for 15 minutes at 425*
  10. Reduce heat to 350* and bake for 30 minutes
  11. Quiche is done when knife inserted comes out clean
