Salmon with Pineapple Sauce

  1. Mix first three ingredients in a zip loc plastic bag. Add salmon and seal tight and marinate in the refrigerator for three hours.
  2. Spray grill with cooking spray and heat grill on high.
  3. Remove salmon from marinade and shake off excess. Lay salmon in a large pan and season with salt and pepper.
  4. While grill heats, pour marinade into a small non-reactive pan. Simmer on stove over med-low heat until it becomes a thick glaze, about 5 minutes. Remove from heat.
  5. Place salmon flesh-side down on rack and close grill. Reduce meat to med-hi and cook for 8-9 minutes without opening cover. Check the salmon. If it is caramelized and spotty brown around the edges, reduce heat to medium and continue until salmon is nicely charred, about 5 minutes longer.Lift rack with salmon from grill and let sit 3-5 minutes. Then place platter over fish and invert. Remove rack. Brush salmon generously with glaze. Serve immediately with remaining glaze for dipping.
