  1. 1. Saute onion, celery and carrot in olive oil until vegetables begin to soften and onion is translucent, about 5 -6 min. Add bell pepper,garlic and all spices cook an additional 3-4 minutes.
  2. 2. Add sausages and cook through aprox. 5 min.
  3. 3. Deglaze skillet with red wine and allow to simmer for 1 -2 minutes. Add pasta sauce.
  4. 4. Reduce heat and simmer 20 minutes.
  5. Serve over pasta or polenta
