  3. Ingredients
  4. 1 broiler fryer chicken; 2
  5. -1/2-3lb cut up
  6. 1/2 c all purpose flour
  7. 1/2 ts salt
  8. 1/2 ts pepper
  9. 1 cn evaporated milk 5 oz
  10. 2/3 c water
  11. 1 lb lard shortening or cooking
  12. -oil
  13. Instructions
  14. Rinse the broiler-fryer chicken pieces with some water; pat dry with paper
  15. towels. In a shallow dish, stir together the all purpose flour, salt and
  16. pepper. Set aside. In a bowl, stir together the milk and the water. Set
  17. the mixture aside. Over medium heat in a 12-inch skillet, heat enough of
  18. the lard, shortening or cooking oil to make 1/2 inch. Dip the chicken
  19. pieces in the milk mixture. Then, roll chicken in the flour mixture.
  20. Cook the chicken, uncovered, for 10 minutes or till the pieces are golden
  21. on the bottom. Turn and cook the pieces for 15 minutes more or till meat
  22. is easily pierced with a fork and no longer pink. Remove chicken pieces
  23. from the skillet. Drain the chicken on paper towels. Serve warm. Makes
  24. 4 to 6 serving
