  1. Grease a pie 1 1/2 quart pie dish with butter.
  2. Butter the bread and then cut the bread into triangles.
  3. Place a layer of the buttered bread, bread side up, into the base of the dish.
  4. Sprinkle this layer with some of the raisins, some of the brown sugar and some of the mixed spice. Repeat the layering until all of the bread and other ingredients are used up.
  5. Gently warm the milk (and cream if using) but do not boil. Take off the heat and add the beaten eggs. Stir well.
  6. Pour the egg and milk mixture over the bread, making sure that all of the bread is soaked in the liquid, pushing it down with a fork if ncessary to make it nice and moist.
  7. Sprinkle grated nutmeg over the top and leave to stand for about 30 minutes.
  8. Preheat the oven to 350F.
  9. Place the pudding in the oven and bake for about 30 - 40 minutes until the custard has set and the top is a golden brown.
