"No matter which option you choose, these beans are excellent over rice, in a recipe that calls for just plain ol' black beans, or even by themsleves. Once you prepare the beans this way, you may find it difficult to just eat 'em straight outta the can again! This recipe is easily multiplied."

  1. Using a medium saucepan, heat oil over medium heat.
  2. Add onion, pepper and garlic; Cook until tender, about 8 minutes.
  3. Stir in all ingredients EXCEPT beans. Cook another minute or so.
  4. Stir in beans, and bring to a boil. Reduce heat and simmer 8-10 minutes.
  5. Serve as desired.
