  1. Preheat oven at 400 degrees.
  2. Combine all dry ingredients together in a large, wide-based dish, big enough to lay chicken pieces flat, one piece at a time. Mash up the dry ingredients together with a fork or spoon.
  3. In a medium-sized separate bowl, whisk the eggs together.
  4. Serves 4 people, about 2 pieces of chicken per person.
  5. Wash chicken.
  6. Grease a baking dish or pan with butter. Coat it with a few tablespoons of the dry ingredient mixture and shake pan around to spread the mixture evenly throughout the bottom of the pan.
  7. Make an 'assembly line', coating the chicken in the egg, then rolling it in the dry ingredient mixture, and then into the baking dish.
  8. Place meatier pieces towards the edge of the pan, end of bones towards the middle. This will help the chicken bake evenly.
  9. Bake on 400 for 10 minutes.
  10. Turn down oven to 350 and bake for another 45 minutes.
